Low Cal Spiced Carrot & Celery SoupWhat’s Needed:
250g of Celery - 25 cals
400g of Carrots - 132 cals
A Large Onion - 57 cals
A Garlic Clove - 5 cals
2 Vegetable Stock Cubes - 34 cals
3 Sprays of FryLight Oil - 3 cals
600ml of Boiling WaterTotal: 256 cals
Makes 6 servings (42 cals per serving)
What To Do Next:
- Thinly slice the carrot and celery lengthways into sticks and set aside
- Thinly slice the onion
- Crush or chop the garlic into small pieces
- Heat the FryLight spray in a pot for about 2 minutes or until the oil is hot but not smoking
- Add the onion, carrot and celery to the pot and sweat for about 5 minutes
- Add the garlic and sweat for a further 10 minutes or until the carrot and celery sticks are slightly soft
- Crush the stock cubes into a tall container, add the boiling water and mix
- Add the stock, chilli seeds (or cayenne pepper if you prefer) and pepper to the pot, leave to simmer for around 20-30 minutes or until the vegetables are very soft
- When it’s all finished cooking, either use a hand blender to puree (or puree in smaller batches in a blender) add any other seasoning (like salt) to taste
- Serve and enjoy!
